Your First 5 Bar Tools
You can make almost any classic cocktail with five pieces of equipment. Buy these once, buy them right, and you're done. Everything else is either a gimmick or a niche tool you'll figure out you want when (and if) you actually need it.
The five:
- Jigger
- Boston shaker
- Hawthorne strainer (plus a fine-mesh strainer)
- Mixing glass
- Bar spoon
Total spend, if you don't go silly: $60-90. Less than a single round at a decent bar.
1. The jigger
What it does: measures liquor accurately. That's the whole job.
Why it matters: cocktails are ratios. A Daiquiri is 2:1:0.75 rum-lime-sugar. Get any part wrong by half an ounce and the drink is broken. "Eyeballing" is how beginners think pros work. Pros measure. Then they stop measuring once muscle memory is locked in, which takes hundreds of pours.
What to buy:
- A Japanese-style jigger with 1 oz / 2 oz cones and interior measurement lines for ½, ¾, 1½, etc. Cocktail Kingdom's "Leopold" or Koriko jiggers are the standard. $12-20.
- Avoid the squat 1 oz / ½ oz tin jiggers from kitchen stores. The cones are too shallow to read and the proportions are wrong for modern recipes.
How to use it:
- Fill to the rim, not the line below. "1 oz" means a slight meniscus.
- Pour over the drink, not over the counter. Hold the jigger close to the shaker tin so a missed pour lands somewhere recoverable.
- For ¾ oz in a 1 oz cone, use the inner line; don't try to fill it ¾ by feel.
2. The Boston shaker
What it does: holds your drink and ice while you shake it. Aerates, chills, and dilutes a cocktail in about 10-15 seconds.
Why it matters: every shaken drink (sours, daiquiris, margaritas) happens here.
The cobbler shaker takedown
A "cobbler" is the three-piece shaker with a built-in strainer cap. They're sold in every kitchen store. Skip them.
- The cap freezes shut mid-shake when the metal contracts. You'll be banging it against the counter to open it. That's not a hypothetical, that's just how they fail.
- The built-in strainer holes are too coarse for fine-strained drinks and too fine for chunkier ones. Worst of both.
- You can't fit much ice in them.
The Boston shaker is two metal tins (or one tin and a pint glass). It's what every working bar uses, because it works.
What to buy:
- A weighted tin-on-tin Boston shaker: 28 oz "large" + 18 oz "small." Cocktail Kingdom Koriko or any restaurant-supply equivalent. $20-30 for the pair.
- Avoid: glass-and-tin (glass cracks), three-piece "cobbler" shakers (see above), shakers with rubber gaskets (gaskets degrade).
How to use it:
- Build the drink in the small tin. Fill the large tin most of the way with ice.
- Pour the small tin's contents into the large tin.
- Place the small tin on top, slightly off-center, and tap firmly with the heel of your hand to seal.
- Shake hard, over your shoulder, for 10-15 seconds. The tin should be frosted and almost too cold to hold.
- To open: hold the large tin in your weak hand, and tap the small tin with the heel of your strong hand at the seam where the two tins meet. It pops free.
3. Hawthorne strainer (plus fine strainer)
What they do: the Hawthorne is the spring-loaded strainer that sits on top of your shaker tin to hold back ice and pulp. The fine-mesh strainer is a small tea-strainer-shaped sieve you double-strain through to catch tiny ice shards and citrus pulp.
Why it matters: an unstrained shaken drink looks like slush and tastes watered down. An un-fine-strained sour has a layer of pulpy grit on top.
What to buy:
- A tight-spring Hawthorne. Koriko or Cocktail Kingdom. $10-15. The spring should have many tight coils; cheap ones have a loose spring that lets through ice chips.
- A small fine-mesh strainer ("conical fine strainer" or just a 3-inch tea strainer). $5-10. Don't overthink it.
How to use them:
- Fit the Hawthorne over the large tin, spring-side facing down into the tin.
- Pour with two hands: tin in one, fine strainer hovering over the glass in the other. The drink passes through Hawthorne first, then through the fine mesh into the glass. This is "double-straining."
- Double-strain anything shaken with citrus or muddled ingredients. You can skip the fine strainer for stirred drinks and built drinks; Hawthorne alone is fine there.
4. The mixing glass
What it does: holds spirit-only drinks (Manhattans, Martinis, Negronis) while you stir them down. Gives you a clear view of dilution and a wide surface for the spoon to track.
Why it matters: stirred drinks need to be cold and properly diluted without aeration. You can't stir cleanly in a shaker tin: too narrow, too tall, the spoon catches. A wide-bottomed mixing glass solves this.
Use it for: Manhattan, Martini, Negroni, Old Fashioned (built or stirred), Boulevardier, Sazerac: anything spirit-forward and clear. See when to shake vs stir.
What to buy:
- A 24-32 oz seamed or seamless mixing glass with a spout. The "Yarai" pattern (diamond cut) is common, but slippery when wet. Handle it dry. $20-35.
- Do not buy mixing glasses with a built-in strainer hole. They're awkward to pour from.
- A pint glass works fine while you're starting out. It's what most bars used until 15 years ago.
How to use it:
- Build your ingredients in the glass first, then add ice almost to the rim.
- Slip the bar spoon in, back of the spoon against the inside wall, and stir smoothly; the goal is for the ice to rotate as one column without clinking around chaotically.
- 20-30 seconds for a typical Manhattan. You're chilling and adding about 20-25% dilution.
- Strain through your Hawthorne into a chilled coupe or rocks glass.
5. The bar spoon
What it does: stirs, layers, measures (a typical bar spoon is roughly 1 tsp / 5 mL, about 0.17 oz), and reaches the bottom of tall glasses.
Why it matters: the long twisted shaft lets your fingers spin the spoon between thumb and index without your hand moving. That's the secret to a clean, quiet, steady stir.
What to buy:
- A 30 cm Japanese-style bar spoon with a teardrop counterweight on the end. The shaft should be twisted (it gives your fingers grip during the spin). $5-10.
- Avoid: short spoons, flat-disc-end "muddler" spoons, anything plastic.
How to use it:
- Hold the shaft between your middle and ring finger, with your thumb and index pinching near the bowl.
- Pull and push the spoon in a circle; the twisted shaft should rotate between your fingers without your wrist moving much.
- For layering: invert the bowl just above the surface of the lower liquid and slowly pour the heavier-or-lighter liquid over the back of the spoon to float it.
What you don't need yet
People will try to sell you a $200 starter kit. You don't need most of it. Here's what to skip until you have a reason:
- Muddlers. Use the bottom of a sturdy bar spoon, the handle of a wooden spoon, or even a French rolling pin. Fine for the occasional Mojito or Caipirinha. Buy a real wooden muddler later if you start making mint and berry drinks weekly.
- Citrus presses ("Mexican elbow"). Genuinely useful, but a hand-squeeze through your fingers works for one or two drinks. Buy when you're squeezing 5+ limes at a time.
- Channel knives / fancy peelers. A regular Y-peeler does great wide orange and lemon peels. The channel knife is a one-trick tool for thin spirals.
- Smoking guns, fat-washing rigs, clarification kits. Cool. Not for drink #1 through #100.
- Branded ice molds. Optional. A silicone 2-inch cube tray from anywhere is $10 and does the job. See why ice matters more than the mold.
- Cocktail picks, swizzle sticks, atomizers. Nice to have. Not in the way of drinking better.
- Branded "premium" ice ball makers. No.
Five tools. One bottle of decent Bourbon or Gin. Fresh citrus. You're a real bar.
